Friday Night Food

Mutton Tagine
1 onion, finely chopped
3/4 cloves of garlic
slurp of oil
cumin, a generous shake
cinnamon, a generous shake
saffron
ginger
1 kilogram mutton, cut into chunks
500 mls tomato juice
4 baby squash, chopped
small sweet potato, peeled and chopped
generous handful of dried apricots, chopped
a few dates, pitted and chopped
sultanas
a bag of slivered almonds

Preheat the oven to 150˚C. On the stove top, gently cook the onion and garlic in the oil. Add the spices and cook until the aroma has developed. Throw the mutton in and brown it. Add the tomato juice, stir and put in the oven for 1 1/2 to 2 hours (the longer the better). Add the vegetables and fruit, stir well and return to the oven for about half an hour.
Place on the stove, add the nuts and boil for a few minutes to reduce the liquid.
Serve with couscous and green beans.
