Cauliflower Cheese
Mum's Cauliflower Cheese
1 cauliflower
1 tablespoon flour
1 tablespoon butter
1 cup milk
grated cheese
breadcrumbs
salt
pepper
knobs of butter
Cut up the cauliflower. Boil until just beginning to be cooked. Drain, and place in an ovenware dish.
Heat the milk (I heat it in the microwave).
In a small saucepan, melt the butter then mix in the flour, salt and pepper. Add a little of the warmed milk, then gradually add the rest of the milk, stirring continuously to avoid lumps. Continue to stir until it’s boiling, and boil for a minute (still stirring). Turn off the heat and add a decent handful of grated cheese, stir well.
Pour over the cauliflower, doing your best to cover it evenly. Sprinkle with breadcrumbs, another small handful of cheese, some breadcrumbs, and more cheese. Dot the top with butter and bake in a moderate oven for 30 minutes to brown.
This is one of our usual celebratory dishes—essential for Christmas, and most birthdays:-)
